Many American bound Italian immigrants arrived in the greater metropolis of New York in the 1800s. Along with their dreams, they brought their beloved family recipes. However, their new home brought challenges requiring adjustments to their cooking.
For instance, instead of wood fired ovens, they had hotter burning coal fired ones. Hotter ovens changed the soft Neapolitan crust into the hand tossed, crispy NYC style we know and love today.
Like the origins of many recipes, Chicago Tavern style’s beginnings are murky. Sometime after the end of prohibition, tavern owners began creating this pizza to entice customers to stay longer. Instead of a hand tossed dough, chefs roll it to create a very thin, cracker like crust.
This style made its appearance in the 1940s when patrons requested pizza from a local restaurant owner, Amedeo Fiore. Fiore mixed up a new recipe without yeast giving this pie a dense, crispy crust. Years later, another chef switched to using Provel, a unique blend of cheeses, to create the St. Louis style.
It’s true Brooklyn style pizza has some slight differences from NY. However, Domino’s Pizza began using the term in 2006 primarily as a marketing tactic. Usually, Brooklyn pizza has a thinner and crispier crust than NYC style. Additionally, pizzerias top it with a provolone and mozzarella blend for a creamy texture.
Locals may have regional preferences, but across America, NYC style is the preferred pizza. Its crust is a delicious combination of texture and flavor that’s flexible enough to fold in half. Furthermore, unlike some other styles, most pizza places sell it by the slice. These characteristics make it an easy meal to eat on the go.
