When searching for pizzerias, you may encounter the term Brooklyn style crust. Although you’ve heard of NY and Chicago, this kind is a new one. Thus, you may be wondering, what is Brooklyn style crust that some restaurants offer?
When Italian immigrants arrived in America bringing pizza, most people viewed it as an ethnic food. Decades later, GIs returning from the war sought some of the delicious pizza they ate abroad. Thus, in the mid-1900s, pizzerias started to open up all over the United States.
As Americans fell in love with pizza, some chefs tweaked the original recipe to build a better pie. Examples of this are the deep dish crust and the use of different cheese toppings like Provel. However, Americans continued to prefer NY style over all the others.
One midwestern pizzeria wanted to capitalize on the appeal of NY pizza. With its roots planted in Michigan, Domino’s offered a thin crust pizza that was different from the traditional NY style. In 2006, Domino’s Pizza introduced its Brooklyn style crust to differentiate it from the other styles the company offered. Then, in the spring of 2024, Domino’s rebranded its Brooklyn style to NY style pizza crust. Thus, it appears that the company used this term more as a marketing tactic than a truly different style.
So, exactly what is Brooklyn style crust? Most pizzerias refer to this as simply NY style and you can use the terms interchangeably. However, you’ll find some crucial differences between Domino’s and an authentic NY pizzeria like Mario’s Pizza.
Nevertheless, it’s important to note that Domino’s Pizza offers several different types of crusts. For our comparison, we used their branded NY style crust.
To begin with, Domino’s Pizza chefs stretch the dough rather than hand toss it. They also dust their crust with cornstarch to make it crispier, something NY pizza makers don’t do. Furthermore, Domino’s tops their pies with a mozzarella and provolone blend for a creamier texture. Finally, Domino’s bakes their pies on metal trays using conveyor belt ovens.
Comparatively, chefs at authentic NY style Italian restaurants like Mario’s Pizza follow traditional methods. For example, we hand toss dough to allow some of the moisture to remain. This gives the crust a softer, chewier finished product. Plus, Mario’s only uses low-moisture mozzarella for its cheese topping. Lastly, we use a wooden peel to place our pies on the floor of our shelf ovens. This bakes our pies to the perfectly golden brown, crispy crust you expect.
