Italy is famous for its variety of pasta shapes. Ziti, smooth pasta tubes, traces its roots back to the southern regions. This pasta shape has a large surface area for holding sauces. Plus, the hollow center can easily trap bits of meat and cheese.
These characteristics make ziti a popular choice for “pasta al forno”, an Italian casserole dish. In Italy, al forno translates “to the oven” and includes any baked dish. Hence, Italians consider lasagna a “pasta al forno” dish.
However, maccheroni, rigatoni, tortiglioni, penne, or trescatori are also suitable pasta shapes for this baked dish. Moreover, like many other Italian recipes, different areas incorporate other ingredients. For example, some regions use a bechamel sauce instead of tomato or incorporate eggplant, meatballs, or pancetta.
