Hence, families developed recipes based on the available local produce.
Then, during the great Italian migration to the U.S., it was mostly southern Italians who left their homeland. The formation of the modern Italian state in 1861 was particularly challenging, especially for southern Italians. Thus, the vast majority of immigrants represented this part of Italy. Naturally, these immigrants introduced Americans to their version, the one we enjoy in America today.
