Two other very popular Italian dishes are calzones and strombolis. While calzones and strombolis are very similar, some of the ingredients and the process for making each differ. Furthermore, calzones are several hundred years old while strombolis are a recent invention.
In 18th century Naples, Italy teemed with working poor. As people rushed through the streets looking for work, they’d grab slices of pizza to eat. However, pizza slices aren’t always easy to eat as you’re walking. Some bakers began to fold pizza dough in half, sealing it and then baking it. Thus, calzones became popular.
Strombolis are the invention of a Philadelphian immigrant, Nazzareno (Nat) Romano. As the owner of a pizzeria in the early 1950s, he began experimenting with a new stuffed sandwich. The stromboli, as this new sandwich became known, became a popular addition at many Italian restaurants.
Both dishes begin with pizza dough. Stuffing ingredients may vary, but calzones typically contain ricotta and mozzarella with tomato sauce on the side for dipping. Generally, strombolis have tomato sauce but never ricotta.
Also, the methods for sealing each are different. Chefs fold the dough of a calzone in half and crimp the edges. For strombolis, chefs roll the dough into a long, cylindrical shape. Typically, calzones are single-serving while strombolis feed many. Whichever you prefer, we serve delicious versions of both.
Although no one knows the exact origin of these tasty morsels, most historians agree garlic knots began somewhere in one of the 5 boroughs. Rather than throw out extra pizza dough, some pizza chef invented this ingenious, delectable treat.
