If you’ve ever watched a pizza chef toss dough, you understand its entertainment value. Yet, spinning and throwing a pie is more than just showmanship. It’s a valuable technique that helps create the best hand tossed pizza in Clemmons.

Pizza crust that’s not properly aerated is dense, tough, and heavy. Tossing dough preserves the air pockets created during fermentation and evenly distributes them throughout the crust.
To ensure even baking without burnt or uncooked spots, the crust must have a consistent thickness. Hand tossing uses centrifugal force and gravity to stretch the dough evenly.
As the dough spins, the airflow over its surface pulls moisture away from the exterior. Then, during baking, the drier outside becomes crisp while the inside remains soft.
Dough that retains much of the gas produced during fermentation bakes with a porous crumb structure. The resulting crust is crispy but tender without feeling tough or rubbery.
New Yorkers often refer to pizza without structural integrity as “flops”. The end of the slice will droop, allowing toppings to slide off. Hand tossing is one of the best ways to avoid floppy pizza.
