People who haven’t grown up in New York City often wonder about the difference between its pie and regular pizza. The truth is, pizza began in the Big Apple. As the dish spread, chefs adapted and changed the original New York pizza recipe.

Some people like to romanticize about NY style pizza, claiming it’s all in the water. In truth, the ingredient choices and techniques are crucial in crafting true New York style pizza.
The best flavored dishes begin with quality ingredients, where freshness is key. Newly harvested produce offers intense and vibrant flavors that shine without the use of additives. Furthermore, fresh ingredients have a strong and natural aroma. This impacts our perception of flavor, as 80% of what we taste relates to our sense of smell.
For example, using fresh tomatoes affects your sauce and your pizza’s overall flavor. True NY style pizza sauce has tomatoes, salt, and basil or oregano. That’s it.
Typically, NY pizza sauce requires newly harvested San Marzano tomatoes for the perfect blend of acidity and sweetness. There’s no need to add much else because the tomatoes do all the work in creating the flavor.
Creating the perfect pizza dough is an art. You need to use the correct ratio of ingredients for the ideal consistency. Then, the dough needs to chill in the refrigerator for 3-4 days to ferment and develop a delicious crust.
Finally, only hand tossing will do. During the fermentation process, gas becomes trapped in the dough. Only hand tossing keeps the right amount of gas in the dough for its signature structure and texture.
Achieving that typical NY taste means cooking on the floor of a deck oven at a high temperature. This gives the pizza a slightly charred appearance. It also causes the ingredients to work together to produce hundreds of new flavor compounds and caramelization. Some chain restaurants use conveyor belt ovens that can’t achieve the same result.
